    Chef and owner, Alisha Valdez, created Mountain Wellness Kitchen out of a deep passion for nourishing food and a commitment to helping others feel their best. “As a mom and someone who values real, whole foods, I wanted to create a space where busy families and individuals could access healthy, delicious meals without compromising on quality,” she explains.

    The name Mountain Wellness Kitchen was inspired by the surrounding Heber Valley landscape, which represents grounding, healing, and a connection to nature. “Our kitchen reflects that same philosophy—providing wholesome, nutrient-dense meals that support wellness from the inside out,” says Valdez.

    Waldorf Chicken Salad (GF/DF)

    A fresh and crunchy salad with juicy chicken, crisp apples, and crunchy walnuts, tossed in a creamy dressing made with Primal Kitchen Mayonnaise. Perfect for a light spring lunch!

    Ingredients

    • 2 cups cooked chicken breast, shredded or cubed
    • 1 cup celery, thinly sliced
    • 1 large apple (Honeycrisp or Fuji), diced
    • ½ cup red grapes, halved
    • ½ cup walnuts, toasted and roughly chopped
    • 2 green onions, sliced (optional)
    • ¼ cup fresh parsley, chopped
    • ½ cup Primal Kitchen Mayonnaise
    • 1 tbsp fresh lemon juice
    • 1 tsp Dijon mustard
    • ¼ tsp sea salt
    • ¼ tsp black pepper

    Instructions

    1. In a large mixing bowl, combine chicken, celery, apple, grapes, walnuts, green onions, and parsley.
    2. In a small bowl, whisk together Primal Kitchen Mayo, lemon juice, Dijon mustard, salt, and pepper. Adjust seasoning to taste.
    3. Pour the dressing over the salad and toss until evenly coated.

    Sweet Recipe: Lemon Poppy Seed Mini Bundt Cakes (GF/DF)

    These mini bundt cakes are bright and zesty, made with almond flour and a hint of poppy seeds, drizzled with a light lemon glaze.

    Ingredients

    For the cakes:

    • 2 ½ cups almond flour
    • ½ cup arrowroot flour
    • 1 ½ tsp baking powder
    • ½ tsp sea salt
    • 3 large eggs
    • ½ cup maple syrup
    • ⅓ cup coconut oil, melted
    • 2 tbsp poppy seeds
    • Zest of 2 lemons
    • ¼ cup fresh lemon juice
    • 1 tsp vanilla extract

    For the glaze:

    • ½ cup coconut butter, melted
    • 2 tbsp fresh lemon juice
    • 2 tbsp maple syrup
    • Warm water to thin, if needed

    Instructions

    1. Preheat the oven to 350°F and grease a mini bundt pan or muffin tin.
    2. In a large bowl, whisk together almond flour, arrowroot flour, baking powder, and salt.
    3. In a separate bowl, whisk together eggs, maple syrup, coconut oil, lemon zest, lemon juice, and vanilla. Gradually add the wet ingredients to the dry until combined. Fold in the poppy seeds.
    4. Pour the batter into the prepared pan. Bake for 18–20 minutes or until a toothpick comes out clean.
    5. Let the cakes cool completely before removing from the pan.
    6. For the glaze, whisk together coconut butter, lemon juice, and maple syrup until smooth. Drizzle over the cakes and garnish with extra lemon zest.

    Schoggibirnen

    Swiss Chocolate & Pears

    Using just 3 ingredients, the Schoggibirnen is arguably the simplest Swiss dessert.

    Ingredients

    • Fresh pears, peeled (leave the stem for easy handling and esthetics) or substitute 1 tin of pears
    • ½ Cup dark chocolate
    • 2 Tbsp butter

    Method

    Steam peeled pears for approximately 8 minutes. Let them cool before placing on 3-4 dessert plates. Using a saucepan, add chocolate (in pieces) and the butter. Carefully melt the chocolate at low heat while stirring (make sure the chocolate sauce doesn’t start boiling, otherwise it’ll turn crumbly).

    Pour the chocolate sauce over the pears and enjoy while the sauce is still warm!

    Spitzbuben

    Swiss Christmas Cookies

    Spitzbuben is a must-have dessert at any Swiss Christmas party. These cookies really stand out thanks to the brightly contrasting fruit filling. The Swiss prefer to use raspberry, lemon, or apple jam.

    Ingredients

    • 10 Tbsp butter, at room temperature
    • 1 Cup all-purpose flour
    • 2/3 Cup granulated sugar
    • 1 tsp vanilla
    • Finely grated zest of 1 lemon
    • 1 egg
    • 1 Tbsp lemon juice
    • 1/2 Tbsp almond extract

    For finishing

    • Confectioners’ sugar
    • Jam or Jelly

    Method

    DOUGH: Knead the ingredients for the cookie dough together. Cover and allow to rest in the refrigerator for 30 minutes.

    BAKING: Preheat oven to 350°F. Roll the dough out very thinly (1/8 inch). Using a cookie cutter, cut the dough into shapes, and cut a hole in the middle of half of the shapes. Arrange all on baking sheets. Bake 10 minutes, until very lightly browned.

    ASSEMBLY: Let the cookies cool, then turn the whole shapes over and cover them with about 1/2 teaspoon of jam. Top with a cookie that has a center hole and sprinkle the top with confectioners’ sugar.

    Sparkling water and soda are refreshing, but let’s be honest — they can get a little boring. This fall, mix up something more exciting and serve it to your family and neighbors — suitable for all ages, or just enjoy a sip for yourself on a sunny afternoon.

    These are a few of our favorite mocktail recipes:

    Faux-jito

    Mojito’s are so refreshing, and the fresh mint leaves and limes make even this mock version look fresh and bright.

    Ingredients

    • 4 limes
    • 40-ish mint leaves
    • 6 tbsp sugar
    • 1.5 liters of sparkling or tonic water
    • 1 cup ice

    Instructions

    Juice limes into a pitcher. Muddle sugar and mint leaves. Don’t have a muddler? A thick wooden spoon will do the trick! Crushing the mint leaves releases all of the oils and flavor and creates the magic. Pour in sparkling or tonic water and add ice. Mix well. Garnish each glass with a fresh sprig of mint and slice of lime. Pairs beautifully with tapas or a light snack.

    Hot “Not” Toddy

    Fall is the season for getting cozy! For adjusting to the early nights and cuddling up with a warm drink. Hot Toddies are perfect for cool nights when your beverage is as much for toasting your hands as it is for toasting your insides.

    Ingredients

    • 1 black tea bag
    • 1 teaspoon honey
    • pinch ground cloves
    • pinch ground nutmeg
    • 1 lemon, halved
    • cinnamon sticks

    Instructions

    Pour boiling water over 1 black tea bag in a mug and let steep for five minutes. In a separate glass or mug, combine the honey and spices. Add the hot tea and the juice of half a lemon to the mug. Stir. Cut the remaining half of the lemon into slices. Add lemon slices and cinnamon stick to the mug, as a fancy garnish. For extra flavor and visual appeal to “wow” your guests, add a slice of pear and sprig of rosemary.

    Mocktail Mule

    A booze-less twist on the ginger cocktail gets its sweetness from a honey-infused simple syrup and looks red carpet ready in a shiny copper mug!

    Ingredients

    • honey
    • 1 half lime
    • 2 ounces fresh lime juice
    • 3 ounces ginger beer

    Instructions

    Make a honey simple syrup: add equal parts honey and water to a small saucepan and heat until the honey melts completely into the water. Let cool. Muddle lime and 1 oz of honey syrup in the bottom of a cocktail shaker. Add the lime juice and shake with ice for 10 seconds. Strain into a glass or copper mug. Top with ginger beer and stir.
